If you’re like many, including myself, making pastry can be the most intimidating part of pie making. I started making pies in the middle of summer, having never had a pie that I liked in my life. It seemed like a simple enough thing to do: easy as pie and all that, and the first crust I made came out pretty well. So I did exactly the same thing the second time but with very different (and disastrous) results.
This was absolutely frustrating, and were it not for the reason that I wanted very much to compete in the New York State Fair and the Pillsbury Bake-Off I may have given up. After nearly 20 years of pie making, including cooking pies at Bubby’s and making pie for my family, and writing Bubby’s Homemade Pie, I have learned a great deal about the intricacies of the simple pie crust. There are lots of variables, like heat and humidity (it’s infinitely easier to make pastry when it’s cool out than when it’s hot) to make it a challenge, and a reason to pay attention to the weather.
