Bubby’s Homemade Pies by Ronald M. Silver and Jen Bervin (John Wiley &amp;amp; Sons, $29.95), was the obvious place to start.&#8221; 
 &quot;Almost all the autumn and winter pies in this book could find their way onto my Thanksgiving table.But I wanted one filled with fruit that was easy, and could be made in advance. I tried the whiskey&#45;apple crumble pie, for which the apple slices are sautéed before they are put into the crust and baked, a technique that I have been using for a few years. The requirement that the apples be tart is one to be taken seriously, so the filling will stand up to the sweet crumble topping.&quot;

 &#45;&#45;&#45;&#45; If you’re like many, including myself, making pastry can be the most intimidating part of pie making. I started making pies in the middle of summer, having never had a pie that I liked in my life.&amp;nbsp; It seemed like a simple enough thing to do: easy as pie and all that, and the first crust I made came out pretty well.&amp;nbsp; So I did exactly the same thing the second time but with very different (and disastrous) results.&amp;nbsp;
 This was absolutely frustrating, and were it not for the reason that I wanted very much to compete in the New York State Fair and the Pillsbury Bake&#45;Off I may have given up.&amp;nbsp; After nearly 20 years of pie making, including cooking pies at Bubby’s and making pie for my family, and writing Bubby’s Homemade Pie, I have learned a great deal about the intricacies of the simple pie crust.&amp;nbsp; There are lots of variables, like heat and humidity (it’s infinitely easier to make pastry when it’s cool out than when it’s hot) to make it a challenge, and a reason to pay attention to the weather.
